Ingredients

  • Crisps:
  • 3/4 cup finely chopped almonds
  • 1/2 cup granulated sugar
  • 1/2 cup butter
  • 1 tbsp. flour
  • 2 tbsp.heavy cream
  • Filling:
  • 1 cup chilled heavy cream
  • 2 tbsp. packed light brown sugar
  • 1/4 tsp. ground cinnamon
  • 1 dash of ground nutmeg
  • 1/2 tsp. pure vanilla extract
  • Assorted fresh berries

Preparation

Step 1

1. Preheat oven to 375 with rack on lower shelf
2.Combine almonds, sugar, butter , flour and heavy cream in a heavy sauce pan. Heat over medium low heat until butter and suagr are completely dissolved, stirring with a wooden spoon; set asid eand cool for 15 minutes
3. Line baking sheets with parchment paper( use only light colored baking sheets-the crisps will burn on a dark baking sheet.) Drop teaspoons of batter 5-6 inches apart. Bake until lightly browned about 8 minutes. Cool on baking sheets on rack for 5 minutes, then transfer to rack and cool completely.NOTE: Crisps are fragile and break easily. Use broken pieces for garnish or serve with fresh fruit or ice cream

Make Filling
1. Beat cream in a chilled bowl with a electric mixer until it forms soft peaks. Gradually add sugar, being careful not to over-beat. Fold in cinnamon,nutmeg and vanilla

To assemble
Place half the almond crisps on a serving tray, top with a mounded spoonful of whipped cream and a few berries. Top with an addtional crisp, a tsp. of whipped cream and a few more berries
