  • 6 large eggs
  • 2 cups low-fat milk
  • 1/4 t dried thyme
  • 1/4 t salt
  • pinch ground nutmeg
  • 1 package (10 oz) frozen chopped spinach, thawed and squeezed dry
  • 4 oz Monterey Jak cheese, shredded (1 cup)
  • 8 Slices pirm white bread, cut into 3/4 inch pieces

Step 1

1: Preheat oven to 375 F

2: In lagre bowl, with wire whisk, beat eggs with milk, thyme, salt, pepper, and nutmeg until blende. With rubber spatula, stir in spinach, Monterey Jack, and bread. Pour mixture into 13" by 9" ceramic or glass baking dish.

3: Bake bread pudding util browned and puffed and knife inserted in center comes out clean(20-25 minutes)

4: Remove bread pudding from oven; let stand 5 minutes before serving.
