Preparation
Step 1
Put cupcake/muffin paper in the cavities of silicone mold.
In a medium bowl, hand whisk and mix melted butter, oil, 2 sugars until combined. Add 1 egg, vanilla extract, whisk again.
In another bowl, sift together cocoa, flour and salt. Add this to the butter mixture. Stir until just combined and incorporated, don't overmix so you won't have tough brownies.
Using a small ice cream scoop or a spoon, divide mixture equally in prepared silicone container about 1-1/2 tbsp. per cavity. May put some sprinkles on top, optional.
Put 1 cup water in the pot, trivet on top of water, set silicone mold on top of trivet.
Close the lid, turn Valve to Sealing, Press Manual High Pressure Setting for 13 minutes, 10 minutes NPR. Turn valve to Venting to release remaining pressure, when the pin drops open lid. Take the silicone mold out of the pot, set on wire rack to cool completely. Chill in the refrigerator.
Note: To serve, you may drizzle top with chocolate fudge or serve with ice cream and drizzle w/ chocolate fudge. You can also eat it as is.
