Herb Roasted Turkey Breast

Ingredients
- 1 whole bone-in turkey breast (6.5-7 lbs.)
- 2 T. olive oil
- 1 T. minced garlic (3 cloves)
- 2 t. fresh lemon juice
- 2 t. dry mustard
- 1 T. chopped fresh rosemary
- 1 T. chopped fresh sage
- 1 T. chopped fresh thyme
- 1-1/2 t. kosher salt
- 1/2 t. black pepper
- 3/4 c. dry white wine

Step 1
Preheat oven to 325 degrees. Place the turkey breast on a roasting pan, skin side up.
In a small bowl combine the garlic, olive oil, lemon juice, mustard, rosemary, thyme, sage, salt and pepper. Rub the mixture over the skin of the turkey breast. You can loosen the skin and spread half the paste underneath. Pour the wine into the roasting pan.
Roast the turkey breast for 1-1/2 to 1-3/4 hrs. until skin is golden brown and instant read thermometer registers 165 degrees when inserted in the thickest part of breast. Check after 1 hr. If the skin is overbrowning, cover loosely with aluminum foil.
When turkey is done, remove from oven, cover pan with aluminum foil and allow turkey to rest at room temperature for 15 min. Slice and serve warm with the pan juices.
