Ingredients

  • 13 lb thin cut corned beef brisket
  • 1 12 oz bottle beer
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 tsp brown mustard seeds
  • 3 strips bacon or 2 tbsp bacon grease

Preparation

Step 1

discard any seasoning that comes with corned beef

rinse and place corned beef in large dutch oven, pour beer and add enough water to cover the meat, drop in the bay leaves, peppercorns, and mustard seeds, bring to a boil over medium heat, skimming off scum that rises to the top, lower heat to medium low, cover pot and cook at low boil for 3 hours adding more water to cover meat as needed

preheat oven to 300 degrees when meat has boiled, remove from pan to rack of roasting tray

reserve all the cooking liquid, fill bottom of tray with ad much liquid as possible, cover all with aluminum foil, the meat is ment to steam cook for two hours
