Ingredients

  • 1 1/2 cups cherry tomatoes, sliced in half
  • 1 large cucumber, chopped (2 cups)
  • 1/2 cup thinly sliced red onions
  • 1/2 cup crumbled feta cheese
  • 12 Kalamata olives pitted and sliced in half
  • 1/2 cup coarsely chopped green peppers (optional)
  • 1/4 cup KRAFT Greek Vinaigrette Dressing or make your own, see below
  • Greek Vinaigrette Dressing Yield 1/2 cup
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar (or more to taste)
  • 1/2 teaspoon dried oregano
  • 1 clove garlic, minced
  • 1/4 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • freshly ground black pepper and salt to taste

Step 1

Combine the salad ingredients in a large container with lid. Toss to mix.
Add 1/4th cup of the vinaigrette to the salad ingredients and toss or shake to combine. Set aside for at least 30 minutes to allow flavors to blend.
Cover and use within 3 days.

Greek Vinaigrette Dressing
Whisk together the vinegar, sugar, oregano, garlic, Dijon mustard, lemon juice, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion, or use a small blender to mix the ingredients and slowly add the olive oil to make an emulsion.
Taste and adjust seasonings.
Cover and store the remaining vinaigrette in the refrigerator up to 2 weeks. Shake before serving.
