Ingredients

  • 3 3 3 medium zucchini
  • 1 1 1 Tbls olive oil
  • 1 1 1 Tbls lemon juice
  • 2 2 2 tsp grated lemon peel
  • 1 1 1 garlic clove, minced
  • 1/2 1/2 1/2 tsp oregano
  • 2 2 2 Tbls grated parmesan cheese
  • 1 1 1 Tbls shredded parmesan cheese
  • salt and pepper

Preparation

Step 1

1. Preheat oven to 350 degrees. Cut zucchini lengthwise in quarters, then cut in half widthwise. Line baking sheet with aluminum fool and spray with cooking spray. Lay zucchini on on the cookie sheet and sprinkle with salt and pepper.
2. In a small bowl whisk together olive oil, lemon juice, lemon peel, garlic, and oregano. Drizzle over zucchini spears. Sprinkle with parmesan cheese.
3. Bake for 15 minutes or until lightly brown. To give more of a crisp edge, broil for the last 3 minutes.
