- 1 12-oz package spaghetti
- 3 teaspoons extra virgin olive oil
- 3/4 lb sweet Italian sausage, casings removed
- 1 8 oz pkg sliced mushrooms
- Freshly ground pepper
- 3 Tablespoons tomato paste
- 1 teaspoon chopped fresh basil
- 1/4 cup heavy cream
- Shredded mozzarella cheese, for topping

Step 1
1. Bring a pot of salted water to a boil. Add spaghetti and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
2. Meanwhile, heat 1 tsp olive oil in a large nonstick skillet over medium heat. Add sausage and cook, breaking it up with a wooden spoon, until browned, about 5 mins. Transfer to a bowl.
3. Add remaining 2 tss olive oil to skillet and increase the heat to medium high. Add mushrooms, season with salt and pepper and cook until lightly browned, 3 to 4 mins. Stir in tomato paste and basil and cook, stirring 1 min. Return the sausage to skillet, then add cream and 1 cup water, bring to a gentle simmer and cook until slightly thickened, 8 to 10 mins. Season with salt and pepper.
4. Add spaghetti to skillet and toss with sauce, adding some of reserved cooking water to loosen, if needed. Top with shredded mozzarella cheese, if desired.
