Sugar Cookies - Splenda

Ingredients
- 2/3 c margarine
- 2 tbsp sour cream
- 1 egg
- 1 1/2 tsp vanilla
- 1 1/2 c Splenda Blend for Baking
- 2 1/2 c + 2 tbsp all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt

Preparation
Step 1
In a large bowl, combine margarine, sour cream, egg and vanilla using a wire whisk. Stir in Splenda. Add 2 1/2 c flour, baking powder and salt. Mix gently to combine using a sturdy spoon. Cover and refrigerate for 2 hours or more.
Just before baking, preheat oven to 37F and spray 3 baking sheets with butter-flavored cooking spray. shape dough into a ball, Sprinkle remaining 2 tbsp of flour evenly over pastry board (counter). Place dough on floured surface and roll out to 1/4 inch thickness,. Using a 2 inch cookie cutter, cut into 32 cookies, pressing dough together as necessary. Place cookies on prepared sheets.
Bake for 10 - 12 minutes or until bottome afre lightly browned. Removecookies from sheets and cool on wire racks,
Hint: If desired, lightly sprinkle with colored sugar crystals just before bking, or frost with Grandma Jo's Frosting Glaze after cooling.
