Ingredients
- For The Garlic Butter:
- 1/2 stick margarine
- 1/2 stick butter
- 1 teaspoon minced garlic (from a jar, in oil or water)
- Chopped fresh parsley, to taste
- For The Haddock:
- 4 center cut haddock filets
- 1 can diced tomatoes
- chopped fresh parsley, for garnish

Step 1
To Make The Garlic Butter:
Mix all garlic butter ingredients together until well incorporated. Store in refrigerator until ready to use.
Preheat oven to 350 degrees.
For The Haddock:
Place the filets in an ovenproof casserole. Place 1 heaping tablespoon of garlic butter on top of each filet. Top with the diced tomatoes and basil.
Bake in 350 degree oven for 25 minutes, or until cooked through.
NOTE:
A little white wine can be added to fish before baking, if desired.
Leftover garlic butter can be stored, covered, in the refrigerator for about a week. Use it on any fish or chicken dish, or as a spread for bread.
