Ingredients
- 1 onion, finely chopped
- 1/4 cup (1/2 stick) butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 egg yolk, beaten
- 1 cup (4 ounces) grated Parmesan cheese
- 1/2 tsp salt
- 1/8 tsp pepper
- 2 1/2 pounds fresh broccoli, or 2 (16-oz) pkgs frozen broccoli
- 2 Tbsps butter, melted
- 1/2 cup bread crumbs

Step 1
Saute' the onion in 1/4 cup butter in a saucepan. Stir in the flour. Add the milk gradually, stirring constantly. Cook until thickened, stirring constantly. Stir a small amount of the hot mixture into the egg yolk; stir the egg yolk mixture into the hot mixture. Add the cheese, salt and pepper and mix well. Remove from the heat. Cook the broccoli in a small amount of water in a covered saucepan for 7 to 10 minutes or just until tender; drain. Arrange the stalks toward the center in a 9 x 13-inch baking dish Pour the sauce over the broccoli. Sprinkle mixture of 2 tablespoons butter and the bread crumbs over the top. Bake at 400 degrees for 20 minutes or until brown and bubbly.
