Shrimp, Baked Stuffed

Ingredients
- ! pound jumbo shrimp, butterflied and rinsed
- 1 egg, lightly beaten
- 6 ounces lump crabmeat
- 2 tablespoons heavy cream
- 1/2 teaspoon dry mustard
- 1/2 teaspoon salt
- 6 tablespoons butter
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup bread crumbs
- salt and pepper to taste

Step 1
Preheat oven to 400 degrees.
Combine egg, crabmeat, cream, mustard and 1/2 teaspoon salt in a bowl. Set aside.
Melt the butter in a large skillet over low heat. Remove from heat. Dredge shrimp in the butter, the arrange shrimp in baking dish. Season shrimp lightly with salt and pepper to taste.
Return the skillet, with remaining butter to medium heat. When butter is sizzling, saute red pepper for 2 minutes. Add bread crumbs and saute for 1 minute more. Pour contents of skillet into the bowl with the crabmeat mixture. Blend thoroughly.
Spoon 1 tablespoon of the stuffing over each shrimp.
Bake in 400 degree oven for 20 minutes.
Serve with rice and your favorite vegetable.
