Ingredients

  • 1 bottle or large can vegetable juice
  • 1/2 bottle or can of water
  • 2 T beef soup base/bouillon
  • 1 1/2 cups frozen corn
  • 1 1/2 cups frozen green beans
  • 1 1/2 cups frozen carrots
  • 2 cups southern style cubed frozen hashbrowns
  • 1 can diced tomatoes with garlic
  • 2 stalks celery sliced
  • 1/2 onion, diced
  • 1 bag frozen meatballs
  • 1 bay leaf
  • Black pepper and Italian seasoning, to taste

Preparation

Step 1

Place everything in the crock-pot except the hash browns and cook on low 5-7 hours or on high 3-5. Add the hash browns the last 45-60 minutes of cooking. This can also be cooked on the stovetop.
