Ingredients
- 1 1 1 x small leek thinly sliced (white only)
- 8 8 8 x Thin slices of good quality sough dough bread
- 60 60gm 60gm Le Conquerant butter
- 250 250 250 gm Will Studd Farmhouse Cheddar Grated
- 1/2 1/2 1/2 raw red onion, grated
- Freshly ground black pepper.

Preparation
Step 1
Blanch leek in saucepan of boiling water then refresh in cold water. Drain well and set aside.
Lightly toast bread on either side.
Spread 1 side with butter and then top with leek, grated onion and lots of cheese and pepper.
Place toast under hot grill and cook until cheese melts and is golden brown.
Tip: You can add white wine and crushed garlic to onion mix if desired
