Ingredients

  • 1 Lbs. button mushrooms
  • 4 cups well seasoned chicken broth
  • 4 Tbs. butter
  • 3 Tbs. flour
  • 1/4 dry mustard
  • 1 tsp. tomato paste
  • 1/2 cup cream
  • 1/4 cup sherry
  • paprika
  • black pepper

Preparation

Step 1

Clean and stem 1 lbs button mushrooms. Chop stems finely add them to chicken broth.
Melt butter over medium heat sprinkle them withflour and mustard stir till blended with butter. Add tomatoe paste then gradiually add the strained chicken broth and stir until mixture thickens. Adjust seasonings and stir in cream and sherry and cook for 2 minutes longer.
Serve sprinked with paprika and fresh cracked pepper. Serves 4
