Ingredients
- 6 slices calf’s liver
- salt and freshly ground pepper
- flour
- 4 tablespoons butter
- 2 tablespoons of oil
- ½ cups beef of chicken stock
- 1 tablespoons of butter
- few drops of lemon juice
- ½ cup finely chopped shallots
- 2 tablespoons chopped fresh parsley

Preparation
Step 1
1. Season the liver and dip in flour.
2. Melt butter and sauté shallots for 1-2 minutes.
3. Then sauté the liver for a few minutes each side.
4. Add chicken stock and parsley and over moderate heat continue to cook for another 5 minutes.
5. Add a few lemon juice drops.
6. Serve and sprinkle with parsley.
