Ingredients
- 1 (16-oz.) can cut okra, drained
- 1/4 cup onion, chopped
- 1/4 cup green pepper, chopped
- 3 tablespoons butter
- 4 cups chicken broth
- 1 16 oz. can tomato
- 1 bay leaf, small
- pepper
- salt
- 1/3 to 1/2 cooked smoked sausage, cut into rounds
- 1 cup cooked chicken, diced
- 1 tablespoon parsley, snipped
- 3 cups hot cooked rice

Preparation
Step 1
In large saucepan...
1. Cook and stir okra, onion and green pepper in butter over low heat until onion is tender.
2. Stir in chicken broth, tomatoes and bay leaf; simmer uncovered 15 minutes.
3. Season with salt and pepper.
4. Stir in smoked sausage, chicken and parsley; heat through.
Serve in bowls over or under scoops of rice.
