Sugar Cured Meat Mixture

Ingredients

• BULK:
• 1 1/2 c. salt
• 9 T. brown sugar
• 3 T. pepper
• 25 pounds salt
• 5 pounds brown sugar
• 1/2 pound black pepper

Preparation

Step 1

Mix ingredients and apply to meat. Bulk will cure about 10 pieces of meat. (i.e. shoulders, ham, etc.)
