Step 1


Line a 9 x 9 baking pan with foil. Spray foil with non stick cooking spray.

In a large saucepan, melt butter over medium heat. Cook butter until it is a toasty brown color. Once the butter has a nutty-aroma, lower heat and add 8 cups of mini marshmallows to the pan.

Stir marshmallow frequently until completely melted and smooth.

Remove from heat and stir in ground cinnamon and vanilla.

Stir in crispy rice cereal and stir to coat. Then, stir in remaining 2 cups of mini marshmallows. Don’t mix completely..you don’t want them to melt into the cereal mix.

Press cereal mixture evenly into prepared pan.

In a small bowl, mix together ground cinnamon and sugar for topping. Spread on top of cereal mixture and press lightly down.

Place in refrigerator and let bars cool for at least an hour before serving.
