Preparation
Step 1
Fill a large saucepan with 1 inch of water; add a generous pinch of salt. Bring to a simmer. Add a steamer basket. Arrange potatoes in a steamer basket. Cover; steam 7-9 minutes or just until potatoes are tender when pierced with the tip of a sharp knife. Remove potatoes from pan. Rinse with cold water; pat dry with paper towels.
In a large bowl, whisk together mayonnaise, juice, chipotle chile powder, salt, and pepper to taste. Add sweet potatoes, onion, and cilantro; toss gently to combine.
