- 6 6 6 tablespoons extra-virgin olive oil
- 4 4 4 teaspoons balsmlc vinegar
- 1 1 1 tablespoon Dijon mustard
- 1 1 1 teaspoon finely minced shallot
- 1/4 1/4 1/4 teaspoon table salt
- 1/8 1/8 1/8 teaspoon ground black pepper
- 15 15 15 cups spicy greens, such as arugula, watercress, mizuna,
- and baby mustard greens, washed and dried

Step 1
Whisk the oil, vinegar, mustard, shallot, salt, and pepper together in a bowl until combined. Place the greens in a large bowl. drizzle the dressing over the greens a little at a time, and toss to coat evenly, adding more vinaigrette if the greens seem dry.
