Ingredients

  • 6 tbsp soya sauce
  • 6 tbsp chicken broth (or water)
  • 6 tbsp rice vinegar
  • 3 - 6 tbsp peanut butter (optional)
  • 1 tsp fresh ginger, finely chopped
  • 3 cloves garlic, finely chopped
  • 4 tsp cornstarch
  • 2 tsp paprika
  • 2 tsp hot sauce
  • 1 tsp seseme oil
  • 1/2 cup sugar (original calls for 1 cup)
  • 3 tbsp water
  • 2 red peppers, cut in large strips
  • 3/4 cup canola oil
  • 2 lbs boneless, skinless chicken things cut into large cubes
  • 1/2 cup flour
  • 2 green onions, diced
  • salt & pepper, to taste
  • 1/2 cup chopped peanuts (optional)

Step 1

In a small bowl, mix soy sauce, broth, vinegar, ginger, garlic, cornstarch, paprika, hot sauce, sesame oil.

In a small saucepan, mix sugar and water. Bring to a boil and simmer until lightly mixed, about 5 minutes.

Add the soy mixture. Bringing to boil, constantly whisking so it does not burn.

In a large non-stick pan, soften the peppers for about 3 minutes in 2 tbsp. oil.

In a bowl, salt and pepper the chicken. add the flour, toss until it chicken is well coated.


Brown one half of chicken at a time in the rest of the oil (about 1 cm/3/4 in). Add oil as needed. Drain on paper towels and set aside. Cook the other half of the chicken. Throw away any oil left in pan.

In the same pan, heat the sauce. Add the chicken and the peppers and coat them well. Sprinkle with onion.

Serve with rice and sautéed vegetables such as bok choy or Chinese cabbage.
