Ingredients
- Dipping and drizzling:
- 1 1 1 cup butter
- 1/2 1/2 1/2 cup brown sugar, lightly packed
- 1 1 1 teaspoon vanilla extract
- 1/4 1/4 1/4 teaspoon salt
- 2 1/2 2 1/2 1/2 cups old fashioned rolled or instant oats, we prefer rolled oats
- 1/2 1/2 1/2 cup dried cranberries
- 1/2 1/2 1/2 cup sliced almonds
- 6 6 1 ounces quality white chocolate, approximately 1 cup

Step 1
Grease a 9" x 9" square baking pan with cooking spray or butter.
Melt the butter in a large saucepan over medium heat. Add the brown sugar, vanilla extract and salt, then stir to mix thoroughly. Add the oats and continue to cook while stirring over medium heat for 2-3 minutes.
Remove from heat and stir in the cranberries. Then add the sliced almonds and stir until combined.
Pour the mixture into the greased pan and press down firmly. Cover and refrigerate for 1-2 hours, or chill in the freezer for 30-45 minutes, or until firm. Use a pizza cutter to cut into bars.
Dipping and drizzling:
Melt the white chocolate in the microwave at 30-second intervals at 50% power, stirring and heating until just melted, but not too warm. Dip the bottoms of the bars into the chocolate, use a fork to carefully remove them from the chocolate then lay them on a cookie sheet lined with wax or parchment paper. Using a fork, drizzle a little chocolate on top in a back and forth pattern.
Recipe Notes
For the brown sugar and butter mixture, I use medium heat and cook for 2 minutes while stirring constantly.
Grease hands with baking spray or use a piece of wax paper to press down the oat mixture into the pan firmly.
For warm weather areas: While the bars are chilling (without the chocolate), place a cookie sheet in the fridge, so the chocolate will set up quickly after dipping and drizzling them.
The cook time is actually the chilling time.
To create different types of granola bars, just change the dried fruit and nuts.
