Tennessee Potato Soup 1 Picture

Ingredients

  • 2 cups diced potatoes
  • 1 cup[ finely chopped onion
  • 1/2 cup chopped green onions
  • 2 teaspoons salt 1 cup milk
  • 1 stick butter
  • 3 cups water
  • 1/2 cup chopped celery
  • 1 clove chopped garlic
  • 1/4 teaspoon pepper
  • 1/4 cup parsley, optional

Preparation

Step 1

In a 4 qt. pot or casserole dish, melt butter, then sauté onions, celery, green onions and garlic for 10 minutes.
1. Add potatoes and water.
2. Stir, cover and cook until potatoes are tender.
3. Pour into blender and blend until smooth.
4. Pour back into dish, add milk, seasonings and parsley.
5. Reheat about 5 minutes.
