Ingredients
- Crust:
- 1 1 1 cup almonds
- 3/4 3/4 3/4 cup pitted dates
- 1 1 1 tsp. ground vanilla bean or extract (optional)
- Pinch Pinch of sea salt
- Splash Splash of water
- Filling:
- 2 2 2 cups ripe avocatos
- 1/2 1/2 1/2 cup honey or maple syrup
- 1/2 1/2 1/2 cup coconut oil
- 1/3 1/3 1/3 cup fresh lime juice
- 1 1 1 tsp. vanilla extract
- 1/8 1/8 1/8 tsp. sea salt
- Lime zest for garnish

Preparation
Step 1
Crust:
Add almonds, dates and salt to food processor or blender. Process ingredient until fine. Add remaining crust ingredients and mix well. Mixture should stick together when you collect a small handful. Press mixture evenly into oiled 9-inch pie pan.
Filling:
Put all ingredients int blender and blend on high for 30-60 seconds until smooth Pour filling over crust, and use spatula to shape top. Chill pie in freezer for 1 hour. Transfer pie to refrigerator and let set for 3 hours or overnight.
