Ingredients

  • 2 lbs whole strawberries
  • 1 T seedless strawberry jam
  • 8 oz Ricotta cheese
  • 2 T sugar (or sweeten to taste)
  • 14 small shortbread cookies, crushed
  • 1 pint blueberries

Preparation

Step 1

Clean the strawberries and remove the hulls. Cut off each end of the berry and place the ends into a food processor. Slice the strawberries and place into a mixing bowl. When all the strawberries are sliced, add the jam to the ends in the food processor. Process until smooth and combine the mixture with the sliced strawberries. Refrigerate.

When ready to serve the dessert, mix the ricotta and mascarpone cheeses together with the sugar until smooth.

Layer 1/2 the strawberries, 1/2 the cheese mixture and crushed cookies in the serving bowl, repeating another layer. Garnish with the blueberries and serve immediately.
