- 1 1 1 tsp active dry yeast
- 1-2/3 1-2/3 1-2/3 cups water
- 4 4 4 Tbsp olive oil, plus additional for brushing on dough

- 1/2 1/2 1/2 tsp sugar
- 4 4 4 cups all-purpose flour
- 1 1 1 cup bread flour
- Sauces & Toppings:
- 1-1/2 1-1/2 1-1/2 cups marinara sauce
- 1 1 1 cup pesto sauce
- 5 5 5 cups mozzarella cheese
- 1 1 can 1 small can sliced olives
- 1/4 1/4 1/4 lb each sliced prosciutto, salami, and ham
- 1 1 1 small onion, thinly sliced
- 1 1 1 small pepper, thinly sliced
- 1 1 1 small zucchini or squash, thinly sliced
- 1 1 1 cup kale, chopped

Preparation:
In a stand mixer fitted with a dough hook, add the yeast, water, olive oil, salt, and sugar. Next, add the all-purpose and bread flours, about a cup at a time, until the dough begins to come together and pull away from the sides of the mixing bowl. Continue to knead in the mixer for another 5 minutes. The dough should be a little tacky but not so wet that it sticks to your hands.
Roll the dough into a ball and cut in half. Cut each half into thirds, so you have 6 even portions, and roll each portion into a ball. Place the balls in a shallow baking dish, cover with plastic wrap, and refrigerate overnight.
Remove dough from the refrigerator and allow to come to room temperature (about an hour) before proceeding with the directions below.
Preheat the grill.
While the grill is heating, you can begin shaping the dough. Start with a ball of dough on a lightly floured surface, using your palm to flatten it out. Working from the center, use your fingers to gently start pushing the dough down and out towards the edge, making an 8"–9" circle. It's ok if it's not perfectly round!
Turn one side of the grill down to low. You'll be finishing the pizzas on this side.
Brush both sides of a dough round lightly with olive oil and cook it, about 1–2 minutes on each side, on the hotter side of the grill. Repeat with the rest of the dough rounds.
Lay out the sauces and toppings in prep bowls for your guests, so they can create their own pizzas. Place the topped pizza on the side of the grill you turned down to low and close the lid. Cook each pizza for about 5–6 minutes, or until the cheese melts.
