Jan’s Chocolate Chip Cookies

Ingredients
- ½ c butter, room temperature
- ¼ c white sugar
- ¾ c brown sugar
- 1 large egg, room temperature
- 2 tsp vanilla extract (real not fake)
- 1 c flour (alternatively, 1/3 c cocoa plus 2/3 c flour)
- ½ tsp baking soda
- ½ tsp salt
- 6 oz bag or 1 c chocolate chips

Step 1
Preheat oven to 350 degrees. Cream butter. Add both sugars. Beat till well mixed. Add egg and vanilla. Beat till light. Sift together dry ingredients (yes I really do this). Add and beat till just mixed. Don’t overbeat. Fold in chocolate chips. I bake on parchment paper on cookie sheet. I use an ice cream scoop to make large cookies and to make sure the sizes are consistent. This will make 8 ice cream scoops, which makes about a 4 inch cookie. It will take two trays. Don’t put the second batch on the same cookie sheet unless you let it cool first. Hot cookie sheet will make the cookies spread too fast. Bake for 15-17 minutes. Don’t overcook. This is more challenging with the chocolate chocolate version because you can’t judge by colour. Let cool somewhat before you eat. Until they are completely cool, they will be very soft and appear to be under cooked. Have faith.
