Ingredients

  • 1-1/2 1-1/2 1-inch pounds beef sirloin, cut into 1-inch cubes
  • Kosher salt and freshly ground black pepper
  • 2 zest and juice of 2 lemons
  • 2 2 2 tbsp. chopped fresh oregano leaves
  • 2 2 2 garlic cloves, minced
  • 1 1 1 tsp. coriander seeds, toasted and ground
  • 6 6 6 tbsp. extra-virgin olive oil
  • 4 4 4 cups loosely packed arugula

Preparation

Step 1

1. Preheat a grill or grill pan to medium-high heat.

2. Thread 6 pieces of sirloin onto each of 6 skewers and season well with salt and pepper.

3. In a medium bowl, whisk together the lemon zest and juice, oregano, garlic, coriander and olive oil. Divide this vinaigrette equally between 2 bowls, a small one for basting the meat and a larger one for dressing the arugula.

4. Liberally brush the skewered meat with the vinaigrette baste and put the skewers on the grill. Cover and cook until the meat is well-caramelized, about 2 minutes per side. Baste liberally with the vinaigrette while cooking.

5. Remove the skewers from the grill and put them on a platter. Toss the arugula with the remaining vinaigrette and mound on top of the skewers. Serve immediately.
