Southwest Chicken Foil Packet

Ingredients
- 1/2 1/2 1/2 cup frozen corn
- 1/2 1/2 1/2 cup salsa, drained of excess moisture
- 1/2 14.5 1/2 14.5 1/2 14.5 oz can black beans, drained and rinsed
- 2 2 18" 12" duty foil sheets, 18" x 12" long
- 2 2 2 boneless, skinless chicken breasts
- Salt and Pepper
- 2 2 2 teaspoons taco seasoning
- 1 1 1 cup shredded cheese

Preparation
Step 1
Preheat oven to 350 degrees.
In a large bowl, stir together corn, salsa and beans until evenly combined.
Place aluminum foil sheets on counter and spray each with cooking spray. Divide the veggie mixture among the foil sheets.
Season both sides of chicken breasts with salt and pepper and approximately 1 teaspoon taco seasoning per breast. Place seasoned chicken on top of veggies.
Fold sides of foil up and over chicken and roll together. Make sure to leave enough space inside the packet for steam expansion.
Place packets on a baking sheet in oven. Bake 30-35 minutes.
Remove from oven and carefully open packets to allow steam to escape. Sprinkle cheese on chicken, close foil and allow packets to sit until cheese has melted.
