Guacamole with Grilled Quesadillas 1 Picture

Ingredients

  • GUACAMOLE:
  • 3 ripe avocados, peeled and pitted
  • 2 tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1 plum tomato, seeded and finely diced
  • 1/4 cilantro leaves, chopped
  • 1 jalapeno, seeded and finely chopped
  • 1 lg cloves garlic, chopped
  • GRILLED QUESADILLAS:
  • 1 tbsp unsalted butter
  • 1 sweet onion, thinly sliced
  • 1/4 tsp salt
  • 6 lg tortillas (wraps)
  • 12 z manchego cheese, grated (3 cups)

Step 1

GUACAMOLE:

Cut avocados into large chunks and place in a med. bowl. Add lime juice, salt and pepper and mash to desired consistency. Stir in tomato, cilantro, jalapeno and garlic. Set aside.

QUESADILLAS:

1.) heat grill to med-high heat. Melt butter in a cast-iron skillet set on grill rack. add onions and salt and cook 10 minutes, stirring frequently. Carefully remove pan from grill.

2.) Place 2 tortillas on grill and spread half of each with some of the onion. Grill 30 seconds. Sprinkle 1/2 cup of cheese over each tortilla and fold to enclose filling. Grill 1 minute, then flip over and grill 30 more seconds. repeat with remaining tortillas, onion and cheese. cut each quesadilla into wedges and serve with guacamole.
