Easy Bruschetta

This is very simple, yet fresh and delicious take on the classic Italian toast. When I put this together, I usually let the kids help chop; it's great knife practice for up and coming chefs.

Ingredients
- 6 8 6 8 6 - 8 Large Roma Tomatoes diced
- 1 1 1 Large ball Mozzarella (or Pearls if available) diced
- 1/2 1/2 1/2 cup chopped fresh Basil
- 2 2 2 Shallots diced
- 8 8 8 oz Balsamic Vinaigrette (1/2 bottle) (I prefer Kens or Newmans Own... and Lite is just fine)
- 1 1 1 Loaf French Bread sliced
- Parmesan

Step 1
1) Chop up the Tomatoes, Shallot, Basil and Cheese. I usually make the piece about a square centimeter in size, but smaller is good too.
2) Mix all the chopped ingredients in a container and add the Vinaigrette, then stir to mix thoroughly (but don't mash things up)
3) Slice the bread into 1/2 inch thick slices and toast on a baking sheet. To not toast all the way though, just till it starts to dry out. If it start to turn brown, you might be toasting it too much (depending on how crunchy you like things).
4) Spoon the Tomato mixture onto each individual toast and return to the oven. Broil for about 3 minutes (the cheese will start to melt and the dry parts of the bread should brown.
5) Place each toast on a serving plate and sprinkle with Parmesan
