Ingredients

  • 2 cups 2 cups sugar
  • 1 cup 1 cup light-colored corn syrup
  • 1/2 cup 1/2 cup water
  • 1 cup 1 cup butter
  • 3 cups 3 cups ( about 12 ounces ) raw cashews
  • 1 teaspoon 1 teaspoon baking soda,sifted

Step 1

In a candy saucepan combine sugar,corn syrup,& water. Cook and stir until sugar dissolves. Bring to boil; then add butter and stir until melted. Clip a candy thermometer to side of pan. Reduce heat to medium low; continue boiling at moderate, steady rate,stirring occasionally,until thermometer registers at 280 degrees(about 35/45 minuets.) This is the soft crack stage
Heat cashews in the oven for about 20 minuets; stir in the nuts, continue cooking over medium low heat stirring frequently till thermometer registers at 300 degrees ( about 10 minuets more). This is the hard crack stage!
Remove mixture from heat; remove thermometer. Quickly stir in baking soda,mix thoroughly. Pour mixture onto buttered baking sheets. As the brittle cools stretch with Fork & loosen from pans as soon as possible; break apart & store in airtight space.
