Wednesday-chop veggies, cook sweet pots, make brine, clean turkey, cook sausage for stuffing if using
thursday-
noon-bring turkey to room temp
1:00-heat at 500 for 25 mins.
1:30 cook 30 mins. then 350 until 4:00 (18 lb turkey)
check temp often at end. (about 2 1/2-3 hours)
start giblet gravy stock while turkey roasting.
finish mashed pots, keep warm over simmering water in buffet dish
Cook stuffing 1 hr, heat sweets 45 mins, add marshmallows last 10 mins.
rest turkey 20 mins., carve 15 mins prior to serve
finish gravy while turkey rests
