chickpea burgers- middle eastern style

Ingredients
- 1 15oz 1 15oz 15oz can chickpeas, drained, rinsed and mixed with a little lemon juice.
- 1/2 1/2 1/2 tsp salt
- 1/2 1/2 1/2 tsp turmeric
- 1/2 1/2 1/2 tsp paprika
- 1/4 1/4 1/4 tsp cumin
- 1/4 1/4 1/4 tsp coriander
- 1/8 1/8 1/8 tsp cinnamon
- 2 2 2 tsp minced garlic
- 1 1 1 tsp minced ginger
- 1 1 1 egg
- 3 3 3 tbsp. evoo
- 2 2 2 tbsp. lemon juice
- 2 1/2 2 1/2 1/2 c cooked brown rice
- 3 3 3 tbsp. diced red bell pepper
- 1/4 1/4 1/4 c loosely packed minced flat leaf parsley

Step 1
Combine chickpeas, salt, turmeric, paprika, cumin, coriander, cinnamon, garlic, ginger, egg, evoo and lemon juice in a food processor and process until smooth and well combined, scarping the sides occasionally. Transfer the mixture to a bowl and fold in rice, bell pepper and parsley.
Moisten hands to keep mixture from sticking, then shape into 1/4 inch thick patties and 2 1/2 inches in diameter. place on baking sheet and bake for 22-25 minutes at 375 degrees. they will firm up as they cool.
OR heat 2 tsp. oil in a skillet over medium heat and cook about 3 minutes on each side.
