  • 1 lb filet of pork
  • 3/4 cup evaporated milk
  • 2 tbsp Dijon mustard
  • 3 tbsp green onions, chopped

Step 1

Cut filet in 1-inch thick slices. Flatten slices between sheets of parchment paper until about 1/4 in thick. Season with salt and fresh ground pepper. In pan over medium-high heat, heat 1 tsp vegetable oil. Fry pork slices for 2 minutes on each side or until golden and well cooked. Transfer to a plate and keep warm. Lower temperature of pan to low and deglaze pan with evaporated milk, stirring constantly. Add mustard, green onions and pork. Cook for 3 minutes or until sauce thickens slightly.

Serve immediately with rice or mashed potatoes.
