Ingredients

  • 2 1/4 cups all purpose flour
  • 2 tsp baking soda
  • 3/4 cup brown sugar lightly packed
  • 3/4 cup white sugar
  • 2 tbsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp allspice
  • 2 cups grated carrots
  • 1 cup (8 oz) crushed pineapple drained
  • 3/4 cujp raisins
  • 1/2 cup shredded coconut
  • 1/2 chopped nuts, walnuts, or pecans
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup veg oil

preheat oven to 350 with a rack in the lower third. in a large bowl mix together the flour, baking soda, sugar, cinnamon, ginger and allspice. add the carrots and pineapples, raisins coconut and nuts and mix thoroughly. in a sep bowl whisk the eggs with the vanilla and then the oil. pour egg mixture into the dry ingredients in thirds and blend well. do not overmix. fill muffin cups to the brim bake for 30-35 min or until toothpick test comes out clean. allow to cool 10-15min and remove from tins
