- 1 1 1 tablespoon brown sugar
- 2 2 2 tablespoons bourbon or rum
- Kosher salt
- 1 1 1 cup heavy cream
- 1/4 1/4 1/4 cup Greek yogurt
- 2 2 2 tablespoons confectioners sugar
- 8 8 8 meringue cookies, broken into pieces
- Sliced roasted almonds, for serving

Heat oven to 400°F. In a small roasting pan, toss cherries, brown sugar, bourbon, and 1/4 tsp salt. Roast, stirring once, until cherries release their juices, 20 to 25 minutes.
Meanwhile, using an electric mixer, beat cream, yogurt, and confectioner's sugar until soft peaks form.
To serve, layer cherries, whipped cream, and meringue pieces in four parfait glasses. Top with almonds.
