Ingredients

  • 1 2/3 1 2/3 1 2/3 cups all purpose flour
  • 3/4 3/4 3/4 teaspoon baking powder
  • 1/2 1/2 1/2 teaspoon baking soda
  • 1/2 1/2 1/2 teaspoon salt
  • 1/4 1/4 1/4 teaspoon ground nutmeg
  • 6 6 6 Tablespoons (3/4 stick ) unsalted butter,at room temperature
  • 3/4 3/4 3/4 packed light brown sugar
  • 1/3 1/3 1/3 cup granulated sugar
  • 1 1 1 cup applesauce
  • 1 1 1 egg
  • 1 1 1 teaspoon Vanilla
  • 1 1 1 bag (12 ounces ) white chocolate
  • 1 1 1 cup sweetened Flaked coconut
  • 6 6 6 rings dried pineapple finely chopped

Preparation

Step 1

Heat oven to 350 degrees
Sift flour baking powder,baking soda, salt & nutmeg into medium sized bowl.
On medium high,beat utter in a medium sized bowl until creamy, Add sugars and applesauce; beat until light and fluffy. Beat in egg. Beat in vanilla and continue beating until completely incorporated.
On low, beat in flour mixture. Stir in white chocolate chips,Flaked coconut, and chopped dried pineapple. Drop by rounded Tablespoon, 2 inches apart, onto ungreased baking sheet.
Bake at 350 degrees for only 9 minuets & cool the cookies on the baking sheet for 1 to 2 minuets. Then transfer to wire rack ! Enjoy!
