Single-Serve Salted Chocolate Chip & Nutella-Swirled Skillet Cookie
By srumbel
Do you love cookies but don’t want to make a huge batch because you don’t trust yourself? (I’m raising my hand right now). Then this recipe is for you. It can be made quickly and it is the perfect portion for one person. If you have kids, make sure they are in bed before you make this or else they’ll try to steal it (from experience, I know). I didn’t have ice cream when I made mine but the cookie would be perfect served warm with a scoop of vanilla ice cream.

Preparation
Step 1
Preheat oven to 325°F.In a small glass bowl, melt the butter. Add in the brown sugar, white sugar, vanilla and water and whisk until smooth.
Add in the flour, baking powder, cornstarch and pinch of salt to form a dough. Fold in the chocolate chips.
Form the dough into one big ball. Open the cookie ball and put a dollop of Nutella in the middle.
Close the ball back up.
Place the dough into a greased mini 5 inch skillet (or if you don’t have one bake on a regular cookie sheet lined with parchment paper).
Sprinkle with a tiny pinch of sea salt.
Bake for about 12-14 minutes. (I like mine a little tiny bit underbaked with a nice scoop of ice cream on top).
Yield: 1 big cookie
