Preparation

Step 1

1. In a bowl mix 2 teaspoons salt with 2 cups water. Brine the chicken parts for 15-20 minutes. Drain.

2. Mix together the coating ingredients. Dip the chicken pieces into the flour mixture, shaking off the excess.

3. In a skillet over medium heat, let the shortening get hot. It should read 350F on a frying thermometer. Brown the chicken on all sides, reducing the heat if needed as it cooks. Pieces should be done in about 20 minutes. If chicken gets too brown and is not cooked enough. put on a cookie sheet and bake at 350F for 15 minutes.
