Ingredients

  • 2 2 2 cups all purpose flour,plus extra for dusting
  • 1/2 1/2 1/2 Tablespoon salt
  • 1 1 1 cup shortening preferably Crisco
  • 1 1 1 cup water
  • 2 15 2 15 ) cans 2 ( 15 ounces ) cans sliced peaches, in syrup
  • 1 29 1 29 can 1 29 ounces ) can peach halves in syrup
  • 2 2 2 teaspoon Ground allspice
  • 1/2 1/2 1/2 ground nutmeg
  • 1 16 1 16 ) box 1 ( 16 ounces ) box dark chocolate
  • 1 1 1 cup granulated sugar
  • 2 2. 1/2 8 ( 8 Tablespoons ) stick of butter, softened
  • 3 3 3 Tablespoon Vanilla extract

Step 1

Preheat oven to 350 degrees
Sift together the flour and salt into bowl. Add shortening and cut it into flour with two butter knives until the mixture resembles a course cornmeal. One Tablespoon at a time,add 6 Tablespoon of cold water to the flour mixture. Stopping to cut in the water with the knives after the addition of each tablespoon. When the dough begins to hold together,dust hands with flour and lightly knead the dough in the bowl. If the dough feels very sticky,add a little flour and kneed in with hands.
Divide the dough into two balls. Place each ball in plastic wrap, press lightly to flatten and place in refrigerator to Chill. Open all the cans of peaches and empty their contents into a strainer held over a pot on the stove. The peach syrup goes into the pot for future use; the fruit goes into bowl.
Sprinkle 2 teaspoons or more allspice and about 1/2 teaspoons of nutmeg over the peaches. Stir to coat all fruits & set aside. Over low heat add 1 cup of firmly packed brown sugar and 1 cup granulated sugar to a pot of peach syrup and stir to help dissolve the sugars. Add one stick of butter to the pot and stir again.
Remove one of the packages of chilled dough from refrigerator and roll out on floured pieces of wax/parchment paper to about 1/8 inches thicknesss. Use the dough, either in one piece or in a patchwork of pieces.to line the bottom and sides of deep casserole. Sprinkle about a 1/2 cup brown sugar around with your fingers or the back of spoon. Drop 4 random Tablespoon from a new stick of butter on top of the brown sugar. Set aside If desired add the remaining 4 Tablespoon of butter from the aforementioned stick into the pot of peach syrup on stove.
When the syrup reaches a rolling boil,turn off heat and add vanilla! Allow mixture to cool .pour spiced peaches & the cooled syrup into casserole dish!
Remove remove remaining pieces of chilled dough form refrigerate and roll it out in floured wax paper to about 1/8 inches thickness cover the peaches & pinch around the sides to seal juices inside. Sprinkle 1/2 cup brown sugar over top of cobble ; add several pats of butter to equal 4 Tablespoons butter on top. Place casserole dish on baking sheet,put cobbler in oven 400 degrees for about 60 to 90 minuets. depending on deepness of dish or until crust turns golden & flakes when gently prodded with knife.
