Oven-Fried Chicken

Ingredients
- 2 cups fresh whole-wheat bread crumbs
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 2-1/2 lb chicken, skinned and cut into 8 pieces
- 1/4 tsp freshly ground black pepper
- 1 cup plain nonfat yogurt

Step 1
Line a baking sheet with foil and spray the foil with vegetable cooking spray. Set aside.
In a shallow bowl or pie plate, combine the bread crumbs, paprika, and cayenne pepper. Mix well and set aside.
Season the chicken pieces with black pepper. Using a rubber spatula, spread a thin layer of yogurt over chicken. Gently roll the coated chicken in bread crumb mixture and pat to coat thoroughly.
Place the chicken on the prepared baking sheet; place in the refrigerator for 15 min to help the coating adhere. Place oven rack in upper third of the oven. Preheat oven to 400 deg.
Bake chicken until golden and juices run clear when meat is pierced with a knife, about 1 hr; do not turn. Place the chicken on serving plates. Serve immediately.
