- 1 can (8 Oz. Size) Crushed Pineapple In Juice
- 1/2 Large Red Onion, Diced
- 1 Yellow Bell Pepper, Diced
- 1 Thai Chili Pepper, Chopped Fine (for Heat; Optional)
- 2 Tablespoons Chopped Cilantro (or More If You Prefer)
- 1/2 teaspoons Black Pepper

Combine the ingredients in a medium-sized bowl and mix well. You can drain the pineapple and reserve the juice and then add back as much as you like, or all of it if you prefer. Cover and refrigerate for at least 30 minutes for the flavors to meld. Serve as a topping for fish or even pulled pork tacos!
