As we were eating this for breakfast, I told my husband that I give it 5

Ingredients
- 4 corn tortillas, cut up in small triangles
- 4 large eggs
- 2 Tbs margarine or butter
- 1/2 cup grated cheddar cheese
- Salt & pepper
- 1 tablespoon salsa
- Servings: 2

- Serving size: 1/2 of a recipe (7.4 ounces).

Preparation
Step 1
1. Saute tortilla pieces in butter in skillet until they are limp.
2. Beat eggs in a bowl and pour over tortillas and sprinkle with salt & pepper.
3. Scramble gently until the eggs are cooked. Add the cheese and heat until it melts.
4. Divide onto 2 plates and cover with your favorite salsa. Serves 2. This recipe doubles well also.
