Ingredients

  • Nonstick vegetable oil spray
  • 1/4 cup (1/2 stick) unsalted butter
  • 1 10-ounce bag marshmallows
  • 1/4 cup honey
  • 1/2 cup unflavored whey protein powder
  • 2 cups old-fashioned oats
  • 1 cup raw shelled sunflower seeds
  • 1/2 cup coarsely chopped macadamia nuts
  • 1/2 cup sliced almonds
  • 1/2 cup sweetened dried cranberries
  • 1 2-ounce bag pork cracklin's (about 2 cups), large pieces crumbled

Preparation

Step 1

Coat a 13x9x2-inch pan and the back of a rubber spatula with nonstick spray. Melt butter in a large pot over medium heat. Add marshmallows and honey and cook, stirring constantly, until marshmallows are melted.

Add protein powder and stir until smooth. Off heat, fold in oats, sunflower seeds, nuts, cranberries, and pork cracklin's. Working quickly, stir to combine.

Quickly transfer to prepared pan; press into an even layer with spatula. Let cool until set, about 30 minutes. Cut into 12 bars.
