  • 1 1 1 cup unsalted butter, softened
  • 1-3/4 1-3/4 1-3/4 cups sugar
  • 4 4 4 eggs
  • 6 6 6 oz. low-fat lemon yogurt
  • 1 1 1 tbsp. grated lemon zest
  • 1/4 1/4 1/4 cup lemon juice
  • 1 1 1 tsp. vanilla extract
  • 2 2 2 tsp. baking powder
  • 1/2 1/2 1/2 tsp. salt
  • 3 3 3 cups cake flour

Preparation

Step 1

Preheat oven to 350 degrees F. With a flat beater on speed 4, beat butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Slow the mixer to speed 2 and add yogurt, vanilla and lemon juice. In a separate bowl, mix the baking powder, salt and cake flour. Add the dry mixture to the wet mixture in two additions. Pour the batter into a greased and floured Bundt cake pan. Bake at 350 degrees for 40-50 minutes. Use the toothpick method to check if cake is done.
