Ingredients
- Second Pie Crust:
- Pillsbury Pie Crust
- 2 cups crushed gingersnaps, cinnamon graham crackers or half of each
- 1 cup pecans, chopped
- 1/2 cup powdered sugar
- 1/4 cup butter, melted
- Filling:
- 1 (15 oz.) can pumpkin
- 1 (14 oz.) can sweetened condensed milk
- 2 large eggs, beaten
- 1/2 cup sour cream
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla
- 1/4 teaspoon ground ginger
- Pecan Streusel:
- Mix 1/4 cup flour, 1/4 cup brown sugar, 2 tablespoons. melted butter and 3/4 cups pecans.

Preparation
Step 1
1. Fit pie crust into pie plate.
2. Stir together gingersnaps and next 3 ingredients. Press over pie crust. Bake at 350 degrees for 10 minutes. Cool.
3. Mix pumpkin and next 6 ingredients. Pour into pie crust. Bake at 350 degrees for 30 minutes. Sprinkle streusel around edge of the crust. Bake 40-45 minutes or until set. Dust with cinnamon.
