Loaded Baked Potato Salad

Ingredients
- 5 lbs small unpeeled red potatoes
- 1 tsp salt
- ½ tsp pepper
- 8 hard boiled eggs, chopped
- 1 lb sliced bacon cooled and crumbled
- 2 cups shredded cheddar cheese
- 1 medium Vidalia onion
- 3 dill pickles chopped
- 1 ½ cup (12oz) sour cream
- 1 cup mayonnaise
- 2-3 tsp prepared mustard

Preparation
Step 1
Place potatoes on a greased cookie sheet.
Bake uncovered @ 425¬¬0 ¬for 40-45 min until tender
Cool in pan
In a large bowl, combine the potatoes, eggs, bacon, cheese, onion
& pickles. In a small bowl combine sour cream, mayo, and mustard.
Pour over the potato mixture and toss to coat.
Serve immediately
