Ingredients

  • 1 1 1 package (12 oz) cranberries
  • 1 1/2 1 1/2 1/2 cups sugar
  • 1 1 1 cup full-bodied red wine
  • 1 1 1 cinnamon stick
  • 1 1 7 piece orange peel, about 7 inches long
  • 1/4 1/4 1/4 tsp. ground mace

Step 1

Pick thru cranberries, removing stems. Rinse and drain. Combine sugar and wine in heavy saucepan. Bring to a boil, stirring constantly over medium high heat. Stir in cranberries, cinnamon stick, orange peel and mace. Return to boil. Lower heat to medium and simmer, partially covered, stirring occasionally, until cranberries burst. Remove from heat. Discard cinnamon stick. Remove orange peel and cut into very thin julienne strips. Stir back in to mixture. Cool completely. Store, tightly covered, in refrigerator.
